My mother has an old saying, “Where there’s smoke, there’s supper.” Let’s just say that cooking has never been the forte of the women in my family. But we try, really we do. My sister tells me that she’s even won a pie baking contest or two. Me? Well, I decided that I ought to start cooking healthy meals for my family; I want my kids to eat nutritious foods, I want to eat nutritious foods, and I try too woo my husband with nutritious food (masquerading as something else, hee hee). Anyway, here’s what’s cookings:

Whole roasted tomatoes with fresh thyme from my garden, garlic, olive oil, ground pepper and coarse salt,

served over tomato spinach pasta with parmesan cheese

or over traditional shells

When I cook chicken, turkey or fish for my husband and daughter, I pour my love into it. As you might remember, I’m a vegetarian, but I love two omnivores . . . so I’m doing my best to give them good foods they like and have some peace too. I rolled the chicken in olive oil and then lightly seasoned it. It’s one of Annabelle’s favorites.

And last, but certainly not least, are these sweet peanut butter and chocolate cupcakes. We substituted 1/4 cup applesauce for butter and oh my, these were so moist and delicious. Since I didn’t have a frosting, we topped these off with organic creamy peanut butter. Annabelle gave it two thumbs up.

So, what came first, the chicken or the egg? I just know that the saying on that magnet became associated with your cooking (and it was mostly great, ma, :-) either before or after you acquired the magnet. Right?

Your peanut butter cupcakes look delicious! I love to cook and have a little cooking blog, but it is sadly neglected. I am just too busy at this point in my life for two blogs. lol! With all the love you have going into your food preparations, you can’t fail. I really believe that. Even avid cooks have some flops… it comes from being willing to experiment a bit. When that happens… there is always “popcorn for dinner” to fall back on. lol!

Oh, your mom’s saying would certainly apply in my house! I love those tasty looking pasta recipes. Pasta is so easy but I tend to overlook it or just rely on the usual sauce. Thanks for the inspiration!

Those all look delicious, and you’ve inspired me to cook up something tasty tonight for dinner (and I’m thinking cupcakes are definitely in order for dessert!) I can tell you put a lot of work and love into your cooking!! :-)

What about cashew or almond butter? I even like soy nut butter, but since soy is in everything, you might want to substitute with a different kind of butter (I’ve been told it is good to stay balanced and not consume too much of any one food source).

I made skewers this weekend with fresh basil, cherry tomatoes and bocconcini cheese pearls. They were fun, because my daughter could really help with making them. Then I drizzled it with lemon-infused olive oil (you really could just use lemon juice & olive oil separately, even), salt and pepper. Fast, easy, and yum!
